

My son requested baked potatoes for dinner, but I wanted to make something a little different, so I thought nacho loaded potatoes would be fun and I was right. These were so delicious, made with ground taco meat, seasoned black beans, nacho cheese, fresh pico de gallo, sour cream and guacamole.
Who doesn’t love a one pan dinner, especially for those family weeknight meals. These lemony chicken meatballs are cooked with orzo with chicken broth and lemon, then finished with heavy cream, spinach, Parmesan, parsley and lemon zest. My whole family loved it!
The fresh corn has been especially good this summer, so I wanted to make a pizza with it. It’s made with mozzarella, fresh corn, burrata, prosciutto, and fresh basil. Such a great summer dinner!

This shredded chicken has been one of my go to recipes for over 20 years! It‘s cooked with Mexican spices, onion and garlic covered for an hour then shredded and finished with lime and cilantro, then served on a crispy corn tortilla with beans, lettuce, salsa and cotija.

I was born and raised in Los Angeles in an Italian family that centered every gathering around cooking and food. My dad taught me how to cook when I was little and we would spend a lot of time together in the kitchen. He passed away when I was 21 and I took over as the cook of the family. Right before the pandemic, I retired from an 18 year career as a hairstylist in the entertainment industry to follow my dreams of teaching people how to cook and appreciate food.
